Pesto





My intention was to make some pesto to have throughout the year.  We had a lot of basil, and Ruth wanted to make some money...so hours later we ended up with 13 cups of pesto.  It was a lot of work, but the twins had fun and really got to use many skills in order to make and sell their Presto Pesto, as they called it.  We used a simple recipe of basil, garlic, Parmesan cheese, olive oil, pecans, salt and pepper.  It came out tasting great and they sold all of it within 30 minutes!  A good amount of cash for them for the summer.  Had I known we'd end up selling it (& selling it so quickly),  I'd have planted a lot more basil.  Maybe next summer.
